Fig Infusion Preparation
Strain the Infusion
After 24 hours, strain the infused cognac through a fine mesh strainer or cheesecloth to remove the figs. Store the infused cognac in a clean bottle.
Cocktail Mixing
Combine Ingredients
In a cocktail shaker filled with ice, add 30 ml of Italicus, 15 ml of Benedictine, 30 ml of Amontillado Sherry, 2 dashes of black walnut bitters, and 2 dashes of Angostura bitters.
Add Fig Infusion
Pour in 60 ml of the fig-infused Courvoisier Cognac into the shaker.
Shake the Cocktail
Shake the mixture vigorously for about 15 seconds until well chilled.
Serving the Cocktail
Strain and Serve
Strain the cocktail mixture into a chilled champagne flute.
Top with Champagne
Slowly top the cocktail with 150 ml of Perrier Jouet Champagne.
Garnish
Garnish the cocktail with 2 fresh fig slices placed on the rim of the glass.
