Sauté the Aromatics

In a large pot, heat the olive oil over medium heat. Add the chopped onion and minced garlic, sautéing until the onion is translucent, about 5 minutes.

Add Vegetables

Stir in the diced carrots, celery, and potatoes. Cook for an additional 5 minutes, stirring occasionally.

Combine Broth and Seasonings

Pour in the vegetable broth and add the canned diced tomatoes, bay leaf, thyme, salt, and pepper. Bring the mixture to a boil.

Simmer the Soup

Once boiling, reduce the heat to low and let the soup simmer for 30 minutes, or until the vegetables are tender.

Finish and Serve

Remove the bay leaf, stir in the chopped parsley, and adjust seasoning to taste. Serve hot.
