Preparation
- 1
Preparing the Carrot Juice
Peel and chop the carrots into smaller pieces. Blend the carrots with 1 cup of water until smooth, then strain the mixture through a fine mesh sieve or cheesecloth to extract the juice. You should have about 1.5 cups of carrot juice.
- 2
Infusing the Chile de Arbol
In a small saucepan, combine the 1.5 cups of carrot juice with the 5 pieces of Chile de Arbol and bring the mixture to a simmer. Let it simmer for about 10 minutes, allowing the flavors to meld. Remove from heat and let it cool. Strain out the chiles.
- 3
Preparing the Mango
Peel and dice the mango into small pieces. Set aside half a cup for garnish, and puree the remaining half cup of mango until smooth.
- 4
Mixing the Cocktail
In a large pitcher, combine the infused carrot juice, mango puree, salt, and lime juice. Stir well to combine all ingredients thoroughly.
- 5
Serving
Serve the cocktail over ice in tall glasses, garnished with the reserved diced mango on top. Optionally, you can add a slice of lime to each glass for additional flavor.
