Method
Tallow-Washed Bourbon Preparation
Roast Bone Marrow
Preheat your oven to 450°F (230°C). Place the bone marrow in a roasting pan and roast for about 15-20 minutes until the marrow is soft and begins to separate from the bone.
Combine with Bourbon
Once the bone marrow is roasted, scoop it out and combine it with the bourbon in a clean jar. Stir well to mix.
Wash Bourbon
Let the mixture cool to room temperature, then refrigerate it for at least 4 hours or overnight. The tallow will rise to the top and solidify.
Strain
After chilling, remove the solidified tallow from the top of the bourbon. Strain the bourbon through a fine mesh strainer to ensure it’s clear of any solids. Your tallow-washed bourbon is now ready.
Cocktail Assembly
Add Ice
Fill a rocks glass with ice cubes, then strain the bourbon mixture over the ice.
Garnish
Garnish your drink with an orange twist by expressing the oils over the cocktail and placing it on the rim of the glass.
