Method
Preparing the Fries
Cutting the Potatoes
Wash and peel the Russet potatoes. Cut them into even sticks, approximately 1/4 inch thick.
Soaking the Potatoes
Place the cut fries in a bowl of cold water and soak for at least 30 minutes to remove excess starch.
Drying the Potatoes
After soaking, drain the water and thoroughly dry the fries using a clean kitchen towel or paper towels.
Heating the Tallow
In a large pot or deep fryer, heat the beef tallow to 350°F (175°C).
Frying the Potatoes
Carefully add the dried fries to the hot tallow in batches. Fry until golden brown and crispy, about 5-7 minutes per batch.
Seasoning
Once fried, remove the fries from the oil and place them on paper towels to drain excess fat. Sprinkle with salt and finely chopped fresh rosemary.

Vegan Mayo
In a small bowl, serve the vegan mayo as one of the dipping sauces.
Ketchup
Place ketchup in a separate small bowl for dipping.
Hot Sauce
Pour hot sauce into another small bowl for those who like a spicy kick.
