Cook the Couscous

In a medium saucepan, bring 1.5 cups of water to a boil. Add the pearl couscous and a pinch of salt. Reduce heat to low, cover, and simmer for about 10 minutes or until the water is absorbed. Fluff with a fork and let cool.

While the couscous is cooking, chop the piquillo peppers, kumato tomatoes, and parsley. Slice the hard-boiled eggs.

Combine the Ingredients

In a large bowl, combine the cooled couscous, Callipo tuna (drained), chopped piquillo peppers, kumato tomatoes, and parsley.

Make the Dressing

In a small bowl, whisk together the olive oil, red wine vinegar, salt, and black pepper.

Toss the Salad

Pour the dressing over the salad mixture and toss gently to combine. Top with sliced hard-boiled eggs.
