Prepare the Vegetables

Peel and dice the Yukon potatoes into small cubes. Slice the onions thinly. Chop the parsley finely.

Caramelize the Onions

In a large skillet, heat 2 tablespoons of olive oil over medium heat. Add the sliced onions and cook, stirring frequently, until they are golden brown and caramelized, about 15-20 minutes. Remove from the skillet and set aside.

Cook the Potatoes

In the same skillet, add another 2 tablespoons of olive oil. Add the diced Yukon potatoes and season with salt and pepper. Cook until the potatoes are tender and slightly crispy, about 10-15 minutes.

Combine Ingredients

In a large bowl, whisk the eggs and season with salt and pepper. Add the caramelized onions, cooked potatoes, and chopped parsley to the egg mixture. Mix well.

Cook the Tortilla

Return the mixture to the skillet over medium heat. Cook until the edges start to set, about 5 minutes. Then, using a large plate, carefully flip the tortilla to cook the other side, about 5 more minutes.

Plate and Garnish

Once the tortilla is cooked through, slide it onto a serving plate. Serve warm or at room temperature, garnished with hot pickled vegetables and a dollop of dill crème fraîche mixed with horseradish.
