Method

Prepare the Filling

1

Make the Filling

In a mixing bowl, combine the shredded rotisserie chicken, béchamel sauce, salt, pepper, and chopped parsley. Mix well until all ingredients are fully incorporated.

Prepare the Croquettes

2

Form the Croquettes

Take a spoonful of the filling and shape it into a small cylinder or ball. Repeat until all the filling is used up.

3

Coat the Croquettes

Set up a breading station with flour, beaten eggs, and breadcrumbs. Roll each shaped croquette in flour, dip it in the beaten eggs, and finally coat it with breadcrumbs.

Fry the Croquettes

4

Heat Oil

In a deep frying pan, heat vegetable oil over medium heat until it reaches 350°F (175°C).

5

Fry the Croquettes

Carefully add the croquettes to the hot oil in batches, frying until golden brown and crispy on all sides, about 3-4 minutes. Remove and drain on paper towels.
