Watermelon Base

Method

Prepare Watermelon Base

  1. 1

    Cube and Chill

Cut a seedless watermelon into 1-inch cubes until you have about 6 cups. Chill the cubes in the refrigerator for 15–30 minutes if they are not already cold — colder fruit yields a brighter, chillier limeade.

  2. 2

    Blend

Place the chilled watermelon cubes in a blender. Add 1 tablespoon granulated sugar (to taste) and up to 1/4 cup water if the watermelon is very thick. Blend on high until completely smooth, about 30–45 seconds. If your blender is large, blend in two batches to avoid overflow.

  3. 3

    Strain (optional)

For a clear, pulp-free limeade, pour the blended watermelon through a fine-mesh sieve or chinois into a large bowl or pitcher, using a spatula to press as much juice through as possible. If you prefer a pulpy, rustic texture, skip straining and use the blended puree directly.

Mix Citrus & Sweetening

  1. 4

    Juice Limes

Roll the limes on the countertop to loosen juices, then cut and juice until you have about 3/4 cup (roughly 3–4 limes). Remove any seeds. Optionally reserve a few lime slices for garnish.

  2. 5

In a small bowl or measuring cup, combine the fresh lime juice, 1/4 cup simple syrup (or honey syrup) and 1 teaspoon lime zest if using. Stir to dissolve. Taste and adjust: if you want a tarter drink, add up to 1–2 tablespoons more lime juice; if you prefer sweeter, add up to 2 tablespoons more simple syrup.

  3. 6

Add a pinch (about 1/8 tsp) of salt to the syrup mixture to brighten flavor and stir until dissolved.

Combine & Finish

  1. 7

Pour the strained (or unstrained) watermelon juice/puree into a large pitcher. Add the lime-syrup mixture and stir gently to combine.

  2. 8

Add 3 cups cold water or sparkling water to the pitcher and stir. Taste the limeade and adjust dilution: add more water for a lighter drink or less for stronger watermelon-lime flavor. If using sparkling water, add it just before serving to retain fizz.

  3. 9

Add ice cubes to the pitcher or individual glasses. Stir once more to chill and distribute flavors.

  4. 10

Garnish: Add fresh mint leaves and lime slices to the pitcher or place them in each glass. Serve immediately. If you strained the juice earlier, keep any leftover pulp for smoothies or freeze into popsicles.
