Prepare
If using an egg white, separate the egg and reserve 1/2 egg white. Chill a coupe or rocks glass by filling it with ice water while you prepare the drink.

Dry Shake
Add bourbon, fresh lemon juice, maple syrup, peach liqueur, angostura bitters, and the reserved egg white (if using) to a cocktail shaker without ice. Seal and shake vigorously for 15–20 seconds to emulsify and build a frothy texture.

Wet Shake
Open the shaker, add the ice cubes, reseal and shake again for 10–15 seconds until the shaker is well chilled (exterior becomes frosty) and the drink is nicely diluted and frothy.

Strain
Dump the ice water from the chilled glass. Double-strain the cocktail through a fine mesh strainer into the chilled coupe or into a short rocks glass over fresh large ice, depending on preference.

Finish and serve: Express a lemon twist over the drink (if using) to release oils, then drop the twist or place a peach slice on the rim. Optionally lay a small thyme sprig on top for aroma. Serve immediately.
