Saffron-poached lobster

    Tie saffron threads in a small piece of cheesecloth or place in a small heat-safe bowl and add 1 tablespoon hot water to bloom for 5 minutes.

    In a medium saucepan, combine 4 cups water, 1 cup white wine, halved shallot, and the halved lemon flesh-side down. Bring to a gentle simmer over medium heat.

    Add the bloomed saffron (and its liquid) to the simmering poaching liquid, reduce heat to low so the surface barely moves. Poach lobster pieces in a single layer for 3–5 minutes until just opaque and cooked through. Avoid vigorous boiling to keep lobster tender.

    Using a slotted spoon, transfer lobster to a bowl. Reserve 1/4 cup of the poaching liquid and strain it. Return the strained 1/4 cup to the pan over low heat, whisk in 1 tablespoon cold butter to create a small saffron butter finish, then season the lobster with 1 teaspoon salt and 1/2 teaspoon black pepper and toss gently with the butter. Keep warm.

Creme fraiche scrambled eggs

    Crack eggs into a medium bowl, add 2 tablespoons heavy cream, and whisk until combined but not frothy. Season with 3/4 teaspoon fine sea salt and 1/4 teaspoon white or black pepper.

    Heat a nonstick skillet over low heat and add 2 tablespoons unsalted butter. Allow butter to melt gently without browning; reduce heat to the lowest setting.

    Pour the beaten eggs into the pan. Stir slowly and continuously with a silicone spatula, scraping the bottom and sides. The goal is very soft curds; cook for about 4–6 minutes on low heat.

    When eggs are about 75% set but still creamy, remove pan from heat and stir in 1/2 cup creme fraiche in three additions, folding gently to finish cooking with residual heat. Taste and adjust seasoning if needed.

    Fold in 2 tablespoons chopped fresh chives. Keep the eggs warm, covered lightly, while you finish bread and assembly.

Gozleme-style flatbread and assembly

    Warm flatbreads: heat a dry skillet over medium-high heat. Brush both sides of each flatbread lightly with extra-virgin olive oil and toast 30–45 seconds per side until pliable and slightly charred. Alternatively, warm in a 350°F (175°C) oven for 5–7 minutes.

    Scatter about 3 tablespoons crumbled feta onto each warmed flatbread in the center. Divide the scrambled eggs evenly among the flatbreads, placing them on top of the feta so the residual heat softens it.

    Evenly distribute the saffron-poached lobster pieces over the eggs (about 3 oz lobster per flatbread). Spoon any remaining saffron butter from the lobster pan over the assembly (about 1 teaspoon per flatbread) to add flavor.

    Finish: sprinkle remaining crumbled feta (about 1 tablespoon each), lemon zest (a light pinch per flatbread), and a pinch of sea salt. Add microgreens or baby arugula if using.

    Fold or roll each flatbread like a gozleme or leave open-faced. Serve immediately, garnishing with extra chives and an optional lemon wedge.
