Prepare Oysters

    Chill serving platter

    Fill the seafood platter or shallow serving dish with crushed ice, spreading an even layer to bed the oysters. Place the platter in the refrigerator while you prepare the mignonette to keep everything cold.

    Shuck or check oysters

    If oysters are whole in shell: hold the oyster flat side up on a towel, insert a short, sturdy shucking knife at the hinge, twist to pop, run the blade along the top shell to cut the muscle, remove the top shell and discard. Slide the blade beneath the oyster to free it from the bottom shell, retaining as much liquor (liquid) as possible. If you have pre-shucked oysters, keep them chilled and transfer them to the bottom shells or small serving spoons as desired. Place each oyster on the bed of crushed ice so they sit level and don’t spill their liquor.

Make Presidio Blossom Mignonette

    In a small bowl combine the red wine vinegar and finely minced shallot. Stir to combine and let sit 2–3 minutes to mellow the shallot's sharpness.

    Add the finely chopped Presidio blossom or edible flower petals to the vinegar-shallot mixture. The blossoms contribute a floral aroma and a delicate appearance—ensure they are pesticide-free and edible varieties.

    Season with freshly ground black pepper and sea salt. Stir to dissolve the salt. Taste and adjust: the mignonette should be bright and tangy with a subtle floral note. If desired, whisk in 1 teaspoon extra-virgin olive oil for a slightly silkier mouthfeel.

    Refrigerate the mignonette for at least 5–10 minutes to allow flavors to marry, but bring it out shortly before serving so it is cold but not frost-chilled.

Assemble & Serve

    Place the chilled platter with bedded ice on the table. Arrange the half-dozen oysters evenly across the ice so they are stable and the liquor inside each shell remains.

    Using a small spoon, place about 1/2 teaspoon of Presidio blossom mignonette on each oyster, or serve the mignonette in a small ramekin alongside so guests can add as they like. If serving in ramekin, provide a small spoon.

    Garnish the platter with lemon wedges and, if using, a few sprigs of parsley or microgreens for color. Provide cocktail forks for easy eating.

    Serve immediately while oysters are cold and fresh. Encourage diners to eat each oyster in a single slurp to enjoy the natural liquor and the mignonette together.
