Base (Salep & Milk)

Prepare salep slurry
In a small bowl whisk the salep powder with 1/4 cup of cold whole milk until fully smooth and lump-free. This prevents clumping when heated.

In a heavy-bottomed saucepan combine the remaining milk (about 5 3/4 cups), heavy cream, granulated sugar, corn syrup and sea salt. Warm over medium heat, stirring occasionally until sugar dissolves and mixture is steaming but not boiling (about 6–8 minutes).

Slowly whisk the salep slurry into the warm milk mixture. Continue to cook over low–medium heat, stirring constantly and scraping the bottom, until the mixture thickens slightly and coats the back of a spoon (about 8–12 minutes). Do not let it boil vigorously. The salep will give a stretchy, slightly elastic texture typical of Marash ice cream.

Remove from heat and let cool for 15 minutes. For best texture, chill the base in the refrigerator until completely cold (4–8 hours or overnight).
Kaymak (Clotted Cream) Topping

While the base is cooling, make a quick kaymak. In a small saucepan melt 4 tbs unsalted butter over low heat. Add 1 cup heavy cream and 1 cup whole milk and warm until just simmering, stirring to combine. Remove from heat and let steep 10 minutes.

Chocolate Swirl

Chop the bittersweet chocolate finely and place in a heatproof bowl. Heat 2–3 tbs water or a splash of cream to just simmer and pour over chocolate, or melt the chocolate gently in a double boiler. Stir until smooth, then whisk in 1 tbs butter and optional 1 tsp cocoa powder until glossy. Let cool to a thick but pourable consistency (room temperature).

Keep covered at room temperature until ready to ripple into the churned ice cream.
Sour Cherry Compote

In a small saucepan combine the pitted sour cherries, 1 tbsp sugar, 1 tsp lemon juice and 2 tbs water. Cook over medium heat, stirring occasionally, until the cherries soften and the sauce thickens slightly, about 6–8 minutes.

Once the salep base is thoroughly chilled, churn it in an ice cream maker according to the manufacturer's instructions (usually 20–30 minutes) until it reaches a soft-serve, stretchy consistency. Marash-style ice cream should be slightly more elastic than standard ice cream thanks to the salep.

Drizzle about half of the cooled chocolate sauce in thin ribbons over the ice cream layer, then spoon small dollops (about 1–2 tbs) of the chilled kaymak across the surface. Spoon a few tablespoons of the sour cherry compote in several spots.

Add another third of the ice cream, repeat with remaining chocolate, kaymak and cherries, then finish with the last third of ice cream. Use a spatula or skewer to create a marbled swirl—avoid overmixing so you retain distinct ribbons of chocolate, kaymak and cherry.

Cover the surface with plastic wrap and freeze until firm, at least 4–6 hours or overnight for best texture.
