If the bottle is at room temperature, place it in the refrigerator for 2–3 hours prior to serving to reach an ideal service temperature of 10–12°C (50–54°F). If you need to chill quickly, submerge the bottle in an ice bucket filled with equal parts ice and cold water for 20–30 minutes.

Set out 3–4 suitable white wine glasses. For a Grand Cru Chablis like Vaudesir, tulip-shaped or lightly bulbous white wine/Burgundy glasses showcase aroma and balance.

If you plan to decant (optional for this young 2023 Grand Cru), have a clean decanter ready. Decanting can open the wine’s aromatics for 15–45 minutes, but this wine is often enjoyable directly from the bottle with a brief rest.

Wipe the top of the bottle with a clean towel or napkin to remove any dust or residue.

Clean the bottle neck

Cut and remove the capsule around the neck. Use a corkscrew to extract the cork slowly and steadily to avoid disturbing sediment (unlikely in this filtered wine). Inspect the cork briefly for any off odors that might indicate a fault.

If you choose to decant, pour the wine gently into the decanter in one steady stream. Allow the wine to rest in the decanter for 15–30 minutes to open up aromatics. If not decanting, allow the opened bottle to rest upright for 5–10 minutes to settle.

Pour 120–150 ml (4–5 oz) into each glass, filling to the widest part of the bowl to allow air contact and aroma concentration. Hold the glass by the stem and present the first glass for tasting if serving formally.

Serve

Keep the remaining bottle in an ice bucket or refrigerator to maintain 10–12°C while serving multiple glasses over an hour or two.

Observe: Note the wine’s pale gold color with greenish highlights typical of Chablis Grand Cru.

Smell: Swirl gently and inhale. Expect focused citrus, white stone fruit, wet stone/mineral notes, subtle floral and lees-derived brioche or hazelnut from élevage.

Taste: Take a moderate sip, letting it coat the mouth. Look for vivid acidity, precise mineral drive, layered fruit (green apple, lemon, white peach), and a long saline finish. Consider how the wine evolves over subsequent pours.

Pairings: Serve alongside oysters on the half shell, steamed or grilled scallops, lightly dressed crab, fine goat cheese, blanched asparagus with lemon vinaigrette, or roast chicken with herbs. Offer small plates and neutral crackers to cleanse the palate.

Storing leftover wine: Recork with the original cork or a vacuum stopper and refrigerate upright. Consume within 2–4 days; mineral-driven Chablis often retains character for a couple days when kept cool and protected from oxygen.
