Cucumber-Mint Base

    Prepare cucumber and mint

    Wash the cucumber and mint. Peel the cucumber if the skin is thick or waxed; otherwise leave the skin on for extra nutrients and color. Roughly chop the cucumber into 1-inch pieces so they puree easily. Remove mint leaves from stems and lightly rub between your palms to release aroma.

    Blend

    Place the chopped cucumber, mint leaves, and 2 cups cold water into a blender. Blend on high until the mixture is very smooth, about 45–60 seconds. Stop and scrape down the sides as needed to ensure everything is pureed.

    Strain

    Pour the blended cucumber-mint through a fine-mesh sieve or cheesecloth set over a pitcher or bowl. Use the back of a spoon or a spatula to press the solids and extract as much liquid as possible. Discard or reserve the pulp for smoothies or a cold soup.

Sweetener & Citrus

    Sweeten and balance

    Add the granulated sugar (or 3 tablespoons simple syrup) to the strained cucumber-mint liquid and stir until dissolved. If using granulated sugar, stir briskly for 1–2 minutes until fully dissolved. Add the fresh lime juice and the optional pinch of salt, stirring to combine. The salt enhances flavor but is optional.

    Dilute to taste

    Add the additional 4 cups cold water to the pitcher and taste. Adjust sweetness or acidity by adding a little more sugar/simple syrup or lime juice if desired. For a more intense cucumber flavor, reduce added water; for a lighter beverage, increase water.

Serve & Garnish

    Fill glasses with ice cubes. Pour the agua fresca over ice. Garnish each glass with a couple of thin cucumber slices and a mint sprig. If serving family-style, refrigerate the pitcher for at least 30 minutes to let flavors meld before serving. Stir gently before pouring.

    Variations and storage: For a sparkling version, replace half or all of the dilution water with chilled sparkling water and add it just before serving to preserve fizz. Refrigerate leftover agua fresca in a sealed container for up to 2 days; stir before serving as separation may occur.
