Chickpea Tagine

Add the chopped onion and cook, stirring occasionally, until softened and translucent, about 6–8 minutes.

Add the minced garlic and cook 30–45 seconds until fragrant.

Stir in the tomato paste and cook 1–2 minutes, stirring constantly, to mellow the acidity.

Add the diced tomatoes, drained chickpeas, and stock. Stir to combine.

Add cumin, coriander, smoked paprika, cinnamon, harissa (if using), salt and pepper. Bring to a gentle simmer.

Reduce heat to low and simmer, uncovered, for 15–20 minutes, stirring occasionally, until flavors meld and the sauce thickens slightly. Mash a few chickpeas against the side of the pan with the back of a spoon for a creamier texture if desired.

In a small bowl combine the chopped black olives, chopped capers, lemon zest, 1 tsp olive oil, and the small amount of chopped thyme or tarragon. Mix and set aside to let flavors marry.

Bring a large saucepan of water to a gentle simmer (not a rolling boil). Add 2 tsp vinegar to the water; this helps the whites set.

Crack each egg into an individual small bowl or ramekin. Working in batches, create a gentle whirlpool in the simmering water with a spoon and slip an egg into the center. Poach for 3 minutes for a runny yolk or 3.5–4 minutes for slightly more set yolk.

Set up a dredging station: one shallow bowl with flour seasoned with 0.5 tsp salt and 0.25 tsp pepper; one bowl with the drained poached eggs (on paper towel) ready to dredge; and, if using, one bowl with breadcrumbs/panko.

Working gently, dredge a chilled/drained poached egg lightly in the seasoned flour, shaking off excess. For extra crunch, press lightly into breadcrumbs or panko after the flour (this step is optional but recommended for texture).

Carefully slide the dredged egg into the hot oil and fry for 30–60 seconds per side, using a spoon to baste with hot oil so the coating crisps evenly. Fry until golden brown and crisp. Use a slotted spoon to transfer to a plate lined with paper towels. Repeat for remaining eggs, maintaining oil temperature (adjust heat as needed).

Immediately season the fried eggs lightly with a pinch of salt.

Note: The interior will remain soft/poached while the exterior is crisp. If you prefer a slightly more set yolk, poach a bit longer before dredging.

Spread a generous spoonful of the tarragon yogurt across each warm pita or plate as a base.

Spoon the chickpea tagine onto the yogurt, dividing it evenly among the pitas (about 1/2 cup tagine per pita).

Scatter the black olive mix over the chickpea tagine.

Top each portion with 1–2 crispy-fried poached eggs (depending on size and appetite).
