Preparation

    Chill glass

    Place an Old Fashioned / rocks glass in the freezer for 5–10 minutes, or fill it with ice and set aside while you build the cocktail.

    Measure ingredients

    Using a jigger, measure 1 oz gin, 1 oz Campari, 1 oz sweet vermouth, and 0.5 oz dark creme de cacao into a mixing glass or cocktail shaker.

    Add bitters

    Add 2 dashes of chocolate bitters (or aromatic bitters if not available) to the mixing glass.

    Add ice and stir

    Fill the mixing glass with plenty of ice (enough to chill thoroughly). Stir gently for 20–30 seconds (about 15–20 rotations) until the mixture is well chilled, slightly diluted, and slightly viscous.

    Prepare glass

    Discard the ice from the chilled rocks glass (if you used it to chill), and add one large ice cube or a few fresh large cubes to the glass.

    Strain

    Strain the stirred cocktail into the prepared rocks glass over the large ice cube(s).

    Garnish

    Express the oils of one orange peel over the drink by holding it skin-side down above the glass and giving it a firm twist, then run the peel around the rim and drop it into the drink as garnish.

    Optional finish

    If using, grate about 1 teaspoon of dark chocolate over the surface of the cocktail and, optionally, add a very light pinch (about 1/4 tsp) of smoked sea salt on top to accentuate the chocolate and bitter notes. Be cautious with salt—start with less.
