Trim and rinse

Wash the asparagus under cold running water to remove any grit. Pat dry with a kitchen towel. Hold each spear near the woody end and bend until it naturally snaps; discard the woody ends or save for stock. Alternatively, line up spears and cut off the bottom 1–1½ inches with a knife for uniformity.

Season

Place trimmed asparagus in a bowl or on a plate and sprinkle with 1 tsp kosher salt; toss gently to coat and let sit while you heat the pan (about 2–3 minutes).

Sautéing

Heat the pan

Choose a large skillet (10–12 inches) and place over medium-high heat. Add 2 tbsp unsalted butter and 1 tbsp olive oil. Heat until the butter is melted and the fat shimmers but before it browns, about 1–1½ minutes.

Cook garlic

Add the sliced or minced garlic to the hot fat and sauté for 20–30 seconds, stirring constantly, until fragrant but not browned (browned garlic will taste bitter).

Add asparagus

Arrange the asparagus spears in a single layer in the skillet. Let cook undisturbed for 2 minutes to develop light browning on one side.

Toss and finish cooking

Use tongs to turn the spears and continue cooking, tossing occasionally, for another 3–5 minutes depending on thickness: thin spears 3 minutes, medium 4 minutes, thick 5 minutes. Cook until asparagus is bright green and crisp-tender (pierces easily with a fork but still has slight snap).

Season and deglaze

Season with 1 tsp freshly ground black pepper. Zest 1 tsp lemon over the asparagus and squeeze 1 tbsp lemon juice into the pan. If pan has stuck brown bits, let the lemon juice bubble briefly to deglaze and lift flavor.

Finish and Serve

Optional finishing touches

If using, sprinkle 2 tbsp grated Parmesan cheese over the hot asparagus and a pinch (about 1 tsp) red pepper flakes for heat. Toss gently to coat so cheese melts slightly.

Plate

Transfer the asparagus to a serving platter or individual plates. Taste and adjust seasoning with additional salt or lemon juice if needed. Serve immediately while hot and bright.
