Rinse and soak

Rinse 1/2 cup split yellow mung dal under cold water until the rinse runs clear. Drain and let sit 10–15 minutes while you prepare other ingredients.

Combine the rinsed dal and 1 cup water in a small saucepan. Bring to a gentle boil, then reduce heat to low, cover, and simmer until the dal is very soft and falling apart, 15–20 minutes. Add more water (1–2 tbsp) if it looks dry before fully softened.

When dal is tender, remove the cardamom pods' seeds (if using) and add crushed seeds into the pan along with 1/4 cup granulated sugar, 1 tablespoon unsalted butter, 2 tablespoons whole milk, and 1 teaspoon fine salt. Stir and continue to cook on low for 4–6 minutes, stirring frequently so it thickens slightly and the sugar dissolves fully.

Transfer the cooked dal mixture to a blender or use an immersion blender and puree until completely smooth and silky. Taste and adjust sweetness or salt. If the paste is too thick to blend, add milk by the tablespoon until it reaches a thick spreadable paste (consistency like thick dulce de leche).

Return the smooth dal paste to the saucepan and cook on very low for 2–3 minutes, stirring, to evaporate excess moisture. Stir in 1/2 tablespoon additional unsalted butter for shine. Remove from heat and let cool to room temperature. Reserve about 3–4 tablespoons of paste to swirl into the gelato (you will fold most into the base; reserve some for marbling).

Gelato Base (Milk Custard)

In a medium saucepan, combine 1 cup whole milk and 1/4 cup heavy cream. Warm over medium heat until small bubbles form at the edge and the mixture is steaming (do not boil). Remove from heat.

While the milk warms, whisk together 2 egg yolks and 1/4 cup granulated sugar in a heatproof bowl until pale and slightly thickened and the sugar is mostly dissolved, about 1–2 minutes.

Temper the yolks by slowly pouring about 1/4 cup of the warm milk into the yolks in a thin stream while whisking constantly. Then pour the tempered yolks back into the saucepan with the remaining milk, stirring continuously.

Cook the mixture over low to medium-low heat, stirring constantly with a wooden spoon or spatula, until it thickens enough to coat the back of the spoon (170–175°F / 77–80°C if you use a thermometer), about 4–6 minutes. Do not let it boil.

Remove the custard from heat and stir in 1 tablespoon corn syrup (optional) and 1/4 teaspoon fine salt. Let the custard cool 5 minutes.

Stir 3–4 tablespoons of the cooled dal paste into the custard until fully incorporated. Taste and adjust sweetness or dal presence — add more dal paste up to another 2 tablespoons if you want a stronger dal flavor. Reserve the remaining dal paste for swirling/marbling if desired.

Cool the combined custard and dal paste: place the bowl in an ice bath and stir occasionally until it reaches near-chill (room-cool to slightly warm), then cover and refrigerate at least 2–4 hours or overnight until thoroughly chilled. Chilling improves texture.

Churning, Finishing & Serving

Get your ice cream machine ready and follow the manufacturer’s instructions. Churn the chilled dal-milk custard in the ice cream maker until it reaches a soft-serve gelato consistency, about 20–30 minutes depending on your machine.

If you reserved dal paste for marbling: transfer half of the churned gelato into a shallow container, dollop with half of the reserved dal paste (about 1–2 tablespoons), and use a spatula or skewer to gently fold a few times to create ribbons. Repeat with remaining gelato and dal paste to create a marbled effect. If using optional gulab jamun/simple syrup, drizzle small amounts between layers for an additional flavor note.

Press a piece of plastic wrap directly onto the gelato surface to prevent ice crystals and freeze for at least 2–4 hours to firm to scoopable consistency. For best texture, remove from freezer 5–10 minutes before scooping.

When serving, sprinkle toasted chopped pistachios and a light pinch of fine sea salt if desired. Portion about 4 oz (one small scoop) per serving.
