Method

Prepare Creamy Wine Mix

    Chill wine

    Place the Rottensteiner-Südtirol white wine in the refrigerator for at least 30 minutes so it is well chilled before mixing.

    Combine dairy

    In a small mixing bowl, whisk together the heavy cream, Greek yogurt, honey, lemon juice, and lemon zest until smooth and slightly thickened. The honey should dissolve fully and the mixture should be homogenous.

    Temper and blend

    Slowly add 2 tablespoons of the chilled white wine to the cream mixture while whisking briskly to temper and loosen the dairy. This prevents curdling once combined with the full wine.

    Finish blend

    Pour the tempered cream mixture into the remaining chilled wine and stir gently but thoroughly for about 15–20 seconds until fully integrated and slightly silky. Taste for balance of acidity and sweetness and add an extra 1/2 tsp lemon juice or 1/4 tsp honey if needed.

Season & Serve

    Season

    Stir in the chopped chives and tarragon, then add sea salt and freshly ground black pepper. Mix once more to distribute herbs and seasoning evenly.

    Prepare glass

    If desired, fill a wine glass with 3–4 ice cubes to keep the drink very cold. Alternatively, serve without ice in a chilled glass.

    Pour and garnish

    Pour the creamy wine mixture into the prepared glass. Garnish with a thin lemon slice on the rim and a sprig of microgreens or small herb sprig floated on top.

    Final tasting note

    Serve immediately. The result should be creamy & clean: a silky mouthfeel from the dairy balanced by the wine's acidity and the brightness of lemon and herbs.
