If bottle is not already chilled, place Poggio Costa-Brut Rosé Prosecco '23 in an ice bucket filled with ice and water for 20–30 minutes until the temperature reaches about 6–8°C (42–46°F). Alternatively, chill upright in the refrigerator for at least 3 hours.

Chill the bottle

Hold the bottle at a 45° angle, keep a firm grip on the cork and remove the foil. Loosen the wire cage while keeping your thumb over the cork. Twist the bottle (not the cork) slowly until the cork eases out with a soft sigh. Aim to avoid loud popping to preserve bubbles and be safe.

Open the bottle

Pour into chilled flutes by tilting the glass and pouring gently down the side to preserve effervescence. Fill each flute about two-thirds full (approx. 100–120 ml per serving) to allow aromas to concentrate.

Pour properly

Rinse strawberries and mint. Hull and halved strawberries lengthwise; reserve some halves for floating in glasses or skewering. Thinly slice oranges if using. Lightly bruise mint sprigs between fingers to release aroma.

Prepare garnishes

Place one strawberry half or a thin orange slice on the rim or gently drop into each flute. Add a small mint sprig if desired. Avoid heavy fruit that will sink and cool the wine too much; keep garnishes light to preserve the wine’s texture and bubbles.

Garnish the flutes

Arrange prosciutto, fresh figs or melon wedges, and cheese on a serving board. Offer Parmesan crisps or crackers on the side. These salty, creamy and fruity flavors complement the off-dry richness and refreshing acidity of the Poggio Costa Rosé.
