Rosé Sparkling 0.0% Non-Alcoholic! Cherry fresh & floral

Place the non-alcoholic sparkling rosé base and chilled carbonated water in the refrigerator until very cold (ideally 30 minutes). When ready, pour 1 cup of the chilled non-alcoholic sparkling rosé into a chilled champagne flute or sparkling wine glass. Gently top with 1/2 cup chilled carbonated water to reach a delicate mousse and adjust effervescence.

Chill and combine base

Place 1/2 cup pitted sour cherries and 2 tablespoons cherry juice in a small blender or food processor. Pulse until smooth, then press through a fine sieve with the back of a spoon to remove skins and any fibrous bits. You should have about 1 to 2 tablespoons of strained cherry purée/juice concentrate.

Prepare cherry purée

Stir 1 tablespoon of white grape (or pear) juice into the strained cherry purée to add brightness and lighten texture. If the purée is very tart, add up to 1/2 teaspoon simple syrup (from the Sweetening section) here, tasting as you go.

Add fruit accent

Using the back of a spoon or a small bar spoon, gently add the measured cherry purée (about 1 tablespoon) into the base of the flute with the rosé. It will sink slightly and create a pleasant cherry note without overwhelming the bubbles.

Add to glass

Combine 1/8 teaspoon dry rosewater, 1/2 teaspoon elderflower cordial, and 1/2 teaspoon fresh lemon juice in a small ramekin. Stir to marry. Taste carefully: rosewater and elderflower are potent, so adjust only in small increments.

Floral balance

Using the tip of a spoon, add the floral mixture dropwise (about 1/4 teaspoon total) to the top of the sparkling rosé. The goal is a subtle floral background rather than a perfumed character. Do not over-add; you can always add a touch more after tasting.

Incorporate aromatics

Taste the finished flute. If it needs sweetness or rounding, stir in up to 1/2 teaspoon simple syrup. Mix gently with a bar spoon to preserve bubbles. The final drink should be balanced between bright cherry, subtle floral notes, and a dry sparkling profile.

Garnish the drink by skewering 1 whole sour cherry (or maraschino) on a pick and resting it on the rim of the glass. Optionally float a single edible rose petal on the surface for a floral visual. Serve immediately while effervescent.
