Preheat & prepare shells
Preheat oven to 425°F (220°C). Arrange oysters in half shells on a rimmed baking sheet or on a bed of coarse salt to stabilize them so they don't tip during baking.
Top each oyster: spoon about 1 level tablespoon of the creamed leeks onto each oyster, followed by a sprinkle (about 1 teaspoon) of the chopped bacon crumble.
Combine panko, Parmesan, and melted butter in a small bowl; mix until evenly moistened. Spoon about 1 tablespoon of the breadcrumb mixture over each oyster, pressing lightly to adhere.
Bake oysters on the middle rack for 8–10 minutes, or until the topping is golden brown and bubbly and the edges of the oysters just begin to curl. If you want extra crispness, broil 1–2 minutes while watching closely.
Creamed Leeks (Rockefeller base)
Trim, halve lengthwise, and rinse leeks thoroughly to remove grit. Thinly slice the white and light green portions and pat dry.
Reduce heat to low and add heavy cream and softened cream cheese. Stir continuously until cream cheese melts and mixture becomes smooth, about 2–3 minutes. If mixture seems too thick, add 1–2 tablespoons water or cream to reach a spoonable consistency.
Season with nutmeg, 1/2 teaspoon salt, and 1/4 teaspoon black pepper. Taste and adjust seasoning. Keep warm while assembling oysters.
Bacon Crumble
Cook bacon in a skillet over medium heat until fully crisp, 8–10 minutes, turning as needed. Transfer to paper towels to drain and cool slightly, then finely chop or crumble.
Old Bay Aioli
In a small bowl, whisk together mayonnaise, lemon juice, Old Bay, minced garlic, Dijon, and black pepper until smooth. Taste and adjust acidity or seasoning. Refrigerate until ready to serve; drizzle or dot over finished oysters.
