    Prep the chicken

    Trim any fat from the chicken breasts and cut into evenly sized 1 to 1 1/4-inch cubes. Place the pieces in a bowl and pour 1 cup buttermilk over them; toss to coat. Cover and refrigerate for at least 30 minutes and up to 2 hours to tenderize and add flavor.

    Set up breading station

    In one shallow bowl combine the flour, cornstarch, smoked paprika, garlic powder, onion powder, kosher salt, and black pepper. In a second bowl, beat the eggs until combined. In a third bowl combine panko and grated parmesan. Spread the three bowls so you can dredge: flour mixture, egg, panko-parmesan.

    Bread the nuggets

    Remove chicken from buttermilk, letting excess drip off. Dredge each piece first in the flour mixture, shaking off excess, then dip into the beaten eggs, then press into the panko-parmesan so each piece is fully coated. Place on a wire rack while you heat the oil.

    Fry

    Pour neutral oil into a heavy skillet or Dutch oven to about 1/2-inch depth (about 2 cups). Heat oil over medium-high until it reaches 350°F (175°C) or a small piece of bread sizzles and browns in about 45 seconds. Fry nuggets in batches without crowding, 2–3 minutes per side, until golden brown and internal temperature reaches 165°F (74°C). Use a slotted spoon to transfer to a wire rack set over a baking sheet; season immediately with a light pinch of salt. Keep warm in a 200°F (95°C) oven if needed while finishing the rest.

    Alternative (oven-baked)

    If you prefer not to fry: place breaded nuggets on a parchment-lined baking sheet sprayed with oil. Lightly spray tops of nuggets with oil and bake at 425°F (220°C) for 12–15 minutes, flipping once, until golden and cooked through.

    Soften cream cheese

    Ensure cream cheese is at room temperature so it whips smoothly. If still firm, microwave in 5–7 second bursts until just softened but not melted.

    Mix base

    In a medium bowl or the bowl of a stand mixer fitted with the paddle or whisk attachment, combine the softened cream cheese, sour cream, and mayonnaise. Beat or whip on medium speed until smooth and airy, about 1–2 minutes.

    Add herbs and season

    Fold in the chopped chives, parsley, tarragon, dill, minced garlic, lemon juice, salt, and black pepper. Taste and adjust seasoning. If the mixture is too thick for dipping, thin with up to 2 tablespoons of extra buttermilk, adding 1 teaspoon at a time until you reach a thick, scoopable consistency that still clings to the nuggets.

    Chill briefly

    Refrigerate the whipped ranch for at least 10 minutes so the flavors meld while you finish cooking the nuggets. Bring to room temperature for a few minutes before serving if chilled longer.

Caviar Garnish & Plating

    Portion the whipped 'Ranch' into a small shallow ramekin or spoon small quenelles onto a serving board. Spoon 1/2 tablespoon of caviar onto the center of each ramekin or onto selected nuggets for dramatic effect. Sprinkle the lemon zest over the caviar and whipped ranch to brighten the flavor. Garnish with microgreens or extra chives if using.

    Arrange 6–8 warm chicken nuggets around the ramekin or on a plate, ensuring each diner gets a mix of nugget and caviar-dressed ranch. Serve immediately so nuggets are crisp and caviar maintains its delicate texture.
