Bloom chia
In a medium bowl or a 1-quart jar, whisk together 2 cups almond milk, 2 tsp matcha powder, 2 tablespoons maple syrup, 1 tsp vanilla extract, and a pinch of sea salt until matcha is fully dissolved and mixture is uniform. Add 1 cup chia seeds and whisk vigorously for 30 seconds to prevent clumping.

Let the mixture sit for 5 minutes, then whisk again to break up any settling clumps. Cover the bowl or screw on the jar lid and refrigerate for at least 2 hours, ideally 4 hours or overnight, until the chia seeds have absorbed liquid and the mixture is thick and spoonable. If mixture becomes too thick after chilling, stir in up to 1/4 cup extra milk to reach desired consistency.

Taste and adjust sweetness or matcha intensity. If you want stronger matcha flavor, dissolve an additional 1/2 tsp matcha in 1 tablespoon hot water and stir into the pudding; if you want sweeter, add more maple syrup by 1/2–1 teaspoon increments.

Slice 3 strawberries and 1 banana. Arrange sliced strawberries and banana on top of each portion of pudding.

Top each portion with roughly 1/3 cup frozen blueberries (they will stay cold and slightly firm; if you prefer them thawed, rinse briefly under warm water or leave at room temperature for 5–10 minutes).

Finish with optional garnishes: sprinkle 2 tablespoons toasted sliced almonds or granola across the servings, dust lightly with up to 1 teaspoon extra matcha powder if desired, and drizzle a small amount of maple syrup (about 1 teaspoon) over each bowl.

Serve immediately if you like the contrast of cold pudding and frozen blueberries, or let topped bowls sit 5–10 minutes for slightly softened fruit. Consume within 2 hours if left at room temperature.

Store leftover pudding (without fresh fruit toppings) in an airtight container in the refrigerator for up to 4 days. Add fresh fruit just before serving for best texture. If pudding thickens in the fridge, stir in a splash of milk to loosen before serving.
