    Sweeten yogurt

    In a medium bowl, stir the 2 cups of Greek yogurt with 2 tablespoons honey or agave until smooth and evenly sweetened. Taste and adjust: add up to 1 additional tablespoon if you prefer sweeter yogurt.

Fruit

    Prepare banana

    Peel the banana and slice it into 1/4-inch (6 mm) coins. If you prefer larger pieces, cut into half-moons.

    Prepare strawberries

    Rinse strawberries, hull (remove the green tops), and slice each berry into 4 or into halves for small berries.

Crunch & assembly

    Layer the parfait

    Choose two clear serving glasses or bowls. Divide half of the sweetened Greek yogurt between the two glasses (about 1/2 cup each). Sprinkle 1 tablespoon granola into each glass on top of the yogurt. Add a layer of sliced banana and strawberry (use about half the fruit onto each).

    Repeat layers

    Top the fruit layer with the remaining yogurt (about 1/2 cup per glass). Finish by sprinkling the remaining granola (1 tablespoon each) and optional chopped toasted nuts evenly over the top.

    Final drizzle

    If desired, drizzle about 1 teaspoon honey or agave over each parfait. Serve immediately so granola stays crisp, or cover and refrigerate up to 2 hours (note: granola will soften over time).

    Serve: Present with a small spoon. Leftovers can be stored covered in the refrigerator for up to 24 hours; stir before eating if the fruit releases juices.
