Prepare the Potatoes

Peel the russet potatoes and cut them into quarters. Place the potato quarters in a large pot of salted water.

Boil the Potatoes

Bring the water to a boil over high heat, then reduce to medium heat and simmer for about 15 minutes or until the potatoes are fork-tender. Drain and allow to cool slightly.

Mash the Potatoes

Once cool, mash the potatoes in a large bowl using a potato masher or fork. Add salt, black pepper, and garlic powder. Mix well until combined.

Prepare the Breading

In a separate bowl, mix the all-purpose flour and cornstarch together. In another bowl, beat the egg.

Shape the Tator Tots

Take a small portion of the mashed potato mixture and shape it into a small cylindrical form, about 1 inch long. Repeat with the remaining mixture.

Coat the Tator Tots

Dip each shaped tot into the beaten egg, allowing excess to drip off, then roll it in the flour-cornstarch mixture to coat evenly.

Heat the Oil

In a large deep skillet or pot, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C).

Fry the Tator Tots

Carefully place a few tator tots into the hot oil, being sure not to overcrowd the pan. Fry for about 4-5 minutes or until golden brown, turning occasionally for even cooking.

Drain and Serve

Use a slotted spoon to remove the tator tots from the oil and place them on a paper towel-lined plate to drain excess oil. Serve hot.
