Toast and simmer spices
In a small saucepan, combine 1 cup water, sliced/crushed ginger, crushed cardamom pods, cloves, cinnamon and crushed peppercorns (if using). Bring to a gentle boil over medium heat, then reduce to a simmer for 3–4 minutes to release the spice aromas.

Brew tea
Add 1 tablespoon black tea leaves to the simmering spiced water. Simmer for 1–2 minutes, stirring occasionally so the tea infuses evenly but does not become overly bitter.

Strain and serve
Remove from heat and strain chai through a fine-mesh sieve into a cup, pressing gently on the solids to extract liquid. Taste and adjust sweetness if needed. Serve hot.
Classic Hot Chocolate

Mix cocoa and sugar
In a small saucepan, whisk together 2 tablespoons unsweetened cocoa powder, 2 teaspoons sugar and 0.125 teaspoon salt. Add a couple tablespoons of the milk to form a smooth paste, eliminating lumps.

Finish and serve
Remove from heat and stir in 1 teaspoon vanilla extract. Pour into a mug and top with whipped cream or marshmallows if desired.

Brew the tea
Bring 1/2 cup water to a near-boil. Steep 1 Earl Grey tea bag (or 1 tablespoon loose leaf in an infuser) in the hot water for 3–4 minutes depending on desired strength. Remove the tea bag or infuser and discard leaves.

Steam or heat milk
While the tea steeps, heat 1 cup milk in a small saucepan or steam with a milk frother until warm and slightly foamy (do not boil).

Combine spices and milk
In a small saucepan, whisk together 1 cup unsweetened almond milk, 1/2 teaspoon ground turmeric, 1/4 teaspoon grated fresh ginger, 1/4 teaspoon ground cinnamon and 1/8 teaspoon freshly ground black pepper.

Heat and emulsify
Warm the mixture over medium-low heat until steaming but not boiling, whisking frequently to fully incorporate the turmeric and prevent settling. Simmer gently for 3–4 minutes to allow flavors to develop.

Sweeten and enrich
Remove from heat and whisk in 1 teaspoon maple syrup (or honey) and 1/2 teaspoon coconut oil if using for extra richness. Taste and adjust sweetener as desired.
