Make the base
In a medium bowl, whisk together 1 cup Greek yogurt, 3 tablespoons olive oil, 3 tablespoons fresh lemon juice, and 1 tablespoon red wine vinegar until smooth.

Flavor and season
Add 2 teaspoons minced garlic, 1 teaspoon Dijon mustard, 1 teaspoon anchovy paste, and 1 teaspoon dried oregano. Whisk to combine.

Cheese and adjust consistency
Whisk in 1/4 cup grated Parmesan cheese. Season with 1 teaspoon kosher salt and 1 teaspoon freshly ground black pepper. If the dressing is too thick, whisk in up to 2 tablespoons water, 1 tablespoon at a time, until you reach a creamy, pourable consistency.

Taste and adjust: taste the dressing and adjust acidity (more lemon or vinegar), salt, or anchovy for umami as desired. Chill for 10–15 minutes to let flavors meld before tossing with the salad.
Grilled Chicken (if using)

Marinate
If using chicken, place 2 boneless skinless chicken breasts between plastic wrap and pound to an even thickness (~1/2–3/4 inch). In a small bowl mix 1 tablespoon olive oil, 1 tablespoon lemon juice, 1 teaspoon minced garlic, 1/2 teaspoon dried oregano, 1/2 teaspoon salt and 1/4 teaspoon black pepper. Rub the mixture over the chicken and let rest 10–20 minutes (or refrigerate up to 2 hours).

Grill or pan-sear
Heat a grill or a heavy skillet over medium-high heat and lightly oil the surface. Cook chicken 4–6 minutes per side, until internal temperature reaches 165°F (74°C) and the exterior is nicely browned. Transfer to a cutting board and let rest 5 minutes, then slice thinly against the grain.

Prepare vegetables
Place 3 cups torn romaine lettuce in a large bowl. Add 1 cup sliced cucumber, 1 cup halved cherry tomatoes, 3 oz pitted halved Kalamata olives, and 1/4 cup thinly sliced red onion.

Add cheese and croutons
Crumble 1/2 cup feta cheese over the salad and sprinkle 1/2 cup croutons and 1 tablespoon chopped fresh parsley, if using.

Dress and toss
Pour desired amount of the Greek Caesar dressing over the salad (start with about 1/3–1/2 cup) and toss gently to coat everything evenly. Taste and add more dressing if needed.

Finish and serve
Top the salad with sliced grilled chicken, if using. Garnish with an extra pinch of oregano or a light drizzle of olive oil and a small sprinkle of grated Parmesan. Serve immediately.
