Prepare breading mix
In a shallow bowl or rimmed plate, combine the all-purpose flour, cornstarch, cornmeal (if using), garlic powder, onion powder, smoked paprika, cayenne pepper, 1 teaspoon salt, and 1/2 teaspoon black pepper. Whisk to evenly distribute the seasonings.

Dredge
Remove the marinated alligator pieces from the fridge. Working in batches, let excess buttermilk drip off each piece, then place pieces into the breading mix. Press gently so the coating adheres, then transfer to a wire rack or tray. For an extra-crispy double-coating: return coated pieces briefly to the buttermilk and re-dredge in the dry mix before frying.

Pour about 1 to 1 1/2 cups of neutral oil into a heavy skillet (cast iron or stainless) to reach roughly 1/2 inch depth, or use a deep fryer set to 350°F (175°C). If using a skillet, heat the oil over medium-high until it registers 350°F on a thermometer or a breadcrumb sizzles and browns in about 30–40 seconds.

Carefully add a single layer of coated alligator bites to the hot oil without crowding (6–8 pieces depending on pan size). Fry for 2 to 3 minutes per side, turning once, until golden brown and an internal temperature of 145–150°F is reached. Total fry time is typically 4–6 minutes per batch depending on piece size. Adjust heat as necessary to maintain 325–350°F and prevent burning.

Use a slotted spoon or spider to transfer cooked bites to a wire rack set over a sheet pan or paper towels to drain. Lightly sprinkle with a pinch of salt while still hot. Repeat with remaining pieces.
