Inspect and drain

If oysters are not freshly drained, place shucked oysters in a fine-mesh strainer and gently pat dry with paper towels. Remove any broken shell fragments. Transfer to a bowl and set aside in the refrigerator while you prepare coatings.

Season the soak

In a shallow bowl combine 1 cup milk or buttermilk with 1 tsp hot sauce, 1 tsp kosher salt, and 1 tsp freshly ground black pepper. Add the oysters and gently stir to coat. Let them soak for 10–15 minutes (this tenderizes and seasons).

Make dry mix

In a wide shallow dish combine 1 cup all-purpose flour, 1/2 cup cornmeal, 1/2 cup panko (if using), 1 tsp garlic powder, 1 tsp onion powder, 1 tsp smoked paprika, 1/4 tsp cayenne, 1/2 tsp black pepper, and 1 tsp kosher salt. Whisk to evenly distribute spices and break up any lumps.

Prepare egg wash

In a separate shallow bowl whisk together 2 large eggs and 2 tbsp milk or water until smooth.

Set up dredging station

Arrange three stations: the flour/cornmeal dry mix, the egg wash, and an empty tray or plate lined with a wire rack or paper towels to hold finished oysters. Remove oysters from the milk soak in small batches, allowing excess to drip back into the bowl.

Dredge oysters

For each oyster: dredge lightly in the dry mix, shake off excess, dip into the egg wash to coat, then return to the dry mix and press gently so the coating adheres. Place each coated oyster on the prepared rack. Repeat until all oysters are coated.

Heat the oil

Pour approximately 3–4 cups neutral oil into a heavy skillet or Dutch oven to a depth of about 1 to 1.5 inches (about 3–4 cups). Heat over medium-high until the oil reaches 350°F (175°C) on a thermometer. If you don't have a thermometer, test with a small pinch of the coating — it should sizzle and float immediately, browning within ~45–60 seconds.

Fry in batches

Working in small batches (6–8 oysters depending on pan size) gently lower oysters into the hot oil using a slotted spoon or tongs. Fry until golden brown and crisp, about 1.5–2.5 minutes per side depending on oyster size. Turn as needed for even browning. Avoid overcrowding (which drops oil temperature).

Drain and finish

Use a slotted spoon to transfer fried oysters to the wire rack or paper towel-lined tray. Lightly sprinkle with 1/2 tsp finishing salt (or to taste) while still hot and garnish with chopped parsley if using. Allow oil to return to temperature between batches (about 2–3 minutes) before frying the next batch.

Serving Sauce (optional)

Make quick sauce

Whisk together 1/4 cup mayonnaise, 1 tsp prepared horseradish, 1 tsp lemon juice, 1/2 tsp hot sauce, 1/4 tsp paprika, and 1/8 tsp salt in a small bowl. Taste and adjust seasoning. Refrigerate until ready to serve.

Serve

Arrange fried oysters on a warmed platter with lemon wedges and the sauce on the side. Serve immediately so they remain crisp. Recommend serving with crusty bread, a simple green salad, or as part of a po' boy sandwich.
