Prep Vegetables & Dressings

    Slice and season

    Thinly slice the tomato and red onion. Place the tomato slices in a single layer on a plate, sprinkle with 1/8 tsp black pepper and 1/8 tsp kosher salt (reserve remaining salt for lettuce if desired). Lightly toss the shredded lettuce with 1/2 tablespoon olive oil, 1 teaspoon red wine vinegar, and 1/8 teaspoon dried oregano; set aside to marinate briefly while you assemble.

    If using pepperoncini or other pickled peppers, slice them thinly and set aside with pickles/giardiniera if using.

Prepare Bread & Spread

    Slice the hoagie roll lengthwise, keeping a hinge if preferred. If you like the roll toasted, place cut-side up under a broiler or in a toaster oven for 1–2 minutes until lightly crisp — watch carefully to avoid burning.

    In a small bowl, combine 1 tablespoon mayonnaise, 1 teaspoon deli mustard, and the remaining 1/8 teaspoon kosher salt. Spread the mayonnaise-mustard mixture evenly on the bottom half of the roll. On the top half of the roll, drizzle the remaining 1/2 tablespoon olive oil and sprinkle with the remaining 1/8 teaspoon dried oregano and the crushed red pepper flakes if using.

Assemble Sandwich

    Layer the meats on the bottom half of the roll in the following order for even flavor and texture: 3 slices Genoa salami folded, all capicola slices, remaining Genoa slices, then prosciuttini. Slightly overlap slices so they sit compactly.

    Top the meats with provolone slices, arranging so cheese covers the length of the sandwich.

    Add tomato slices over the cheese in a single layer, then arrange the onion rings over the tomato.

    Lightly drain or blot any excess liquid from the marinated lettuce, then pile the lettuce over the onions. If using optional pickles or peppers, add them on top of the lettuce now.

    Sprinkle a final pinch of kosher salt (about 1/16 tsp) and a crack of fresh black pepper across the fillings if desired. Close the sandwich and press gently to compress the layers slightly.

Finish & Serve

    Cut the sandwich in half on a diagonal (or into two equal pieces). If preparing for delivery or pickup, wrap tightly in parchment paper or sandwich foil to keep ingredients together while preserving crispness. Serve immediately.
