    Slice and Marinate

    If steak is not pre-sliced, freeze for 20-30 minutes until slightly firm and slice across the grain as thinly as possible. Combine steak, 1 tbs olive oil, 1 tsp soy sauce, 1 tsp Worcestershire, minced garlic, 1/4 tsp black pepper and 1/4 tsp kosher salt in a bowl. Toss to coat and let rest for 10 minutes while preparing vegetables.

    Heat a large cast-iron skillet or heavy sauté pan over medium-high heat until very hot (about 3 minutes). Add a thin film of oil (if needed) and add the marinated steak spread into an even layer. Let sear undisturbed 45–60 seconds to develop color, then use a spatula to flip and break meat into bite-sized pieces. Cook another 30–60 seconds until just cooked through — avoid overcooking to keep steak tender.

    Sauté Mushrooms and Onions

    While skillet preheats for steak, in a second large skillet melt 1/2 tbs butter over medium heat. Add sliced onions and cook, stirring occasionally, until soft and starting to brown, about 5–7 minutes. Add sliced mushrooms and optional peppers and continue cooking 3–4 minutes until mushrooms release moisture and everything is golden. Season with 1/8 tsp salt and 1/8 tsp pepper. Remove vegetables to a bowl and keep warm.

    After steak is cooked, optionally add the cooked vegetables into the steak skillet and toss to combine for 30–45 seconds so flavors meld.

Cheese & Bread

    Toast Roll and Melt Cheese

    Split the hoagie roll lengthwise without cutting fully through. Spread 1/2 tbs butter on the cut faces and toast lightly in a clean skillet or under a broiler until golden, about 1–2 minutes per side. Pile the steak (with vegetables if combined) onto the bottom half of the roll, pressing slightly. Lay 2 slices of white American cheese over the steak. Cover skillet briefly with a lid for 30–60 seconds or place the assembled sandwich under a broiler for 30–45 seconds to melt cheese completely.

Finish & Serve

    Once cheese is melted, close the sandwich, cut in half if desired, and serve immediately. Offer optional hot sauce or ketchup on the side. Adjust seasoning to taste with additional salt and pepper.
