Cook eggs
Heat 1 tbs butter in a nonstick skillet over medium heat. Crack two eggs into a bowl, beat lightly with 1/2 tsp salt and 1/4 tsp black pepper. Pour eggs into the skillet and scramble gently, or make folded omelet-style rounds about the size of the muffin. Cook until just set, about 2–3 minutes.

Assemble sandwich
Place a slice of cheddar on the bottom half of each warmed muffin, top with the cooked eggs so the cheese melts, then close with the top half. Serve immediately.

Prepare bagels
Split and lightly toast bagel halves (30–60 seconds in toaster or 1–2 minutes in oven at 180°C/350°F).

Assemble
Spread about 2 tbsp (per bagel half) cream cheese evenly on each toasted half. Distribute smoked salmon over the cream cheese (about 60 g per whole bagel). Scatter thin onion slices and capers over the salmon, sprinkle with chopped dill, and squeeze a little lemon juice over the top. Close if desired or serve open-faced.

Cook filling
Heat 1 tsp vegetable oil in a skillet over medium heat. Add the cooked sausage or chorizo to warm (1–2 minutes). Pour in the egg mixture and stir gently to scramble until just set, about 2–3 minutes. Remove from heat and stir in half of the shredded cheese and chopped cilantro.

Assemble burritos
Warm tortillas briefly in a dry skillet or microwave (10–15 seconds) to make them pliable. Divide the egg/sausage mixture between the two tortillas, top each with remaining cheese and 1/4 cup salsa. Fold sides in and roll tightly to form burritos. If desired, brown each burrito seam-side down in a lightly buttered skillet for 1–2 minutes per side to seal and create a crisp exterior.
