Activate yeast and mix
In a small bowl, whisk warm water, warm milk, and granulated sugar. Sprinkle instant yeast over the top and let sit 5 minutes until foamy. In a large bowl or bowl of a stand mixer fitted with a dough hook, combine flour and salt. Add the foamy yeast mixture, softened butter, and the whole egg. Mix on low until ingredients come together, then increase speed and knead 5–7 minutes until dough is smooth and elastic (or knead by hand on a lightly floured surface for 8–10 minutes).

Forming the baskets

Prepare pan and shape
Preheat oven to 375°F (190°C). Lightly grease a 12-cup muffin tin. Punch down the risen dough and turn it onto a lightly floured surface. Divide dough into 12 equal pieces (about 50–60 g each). Roll each piece into a ball, then flatten into a disc about 3–4 inches across.

Make basket shape
Press each disc into a greased muffin cup, pushing the dough up the sides to form a cup with a slightly thicker rim. Using your thumb and fingers, pinch or flute the top edge to create a decorative rim. Cover the pan loosely with plastic wrap and let the shaped dough rest and rise for 20–25 minutes, until puffy.

Bake
Bake in the preheated oven for 14–16 minutes, until golden brown and the bottoms sound hollow when tapped. Remove from oven and let cool in the muffin tin 5 minutes, then transfer to a wire rack to cool completely.

Assemble savory filling
If using ricotta, mix ricotta with a pinch of salt and stir until smooth. Divide the ricotta (or leave it out) among cooled baskets, then top each with shredded cheddar, crumbled bacon, and chopped chives. Optionally, return filled baskets to the oven for 3–4 minutes at 350°F (175°C) to melt the cheese slightly. Serve warm or at room temperature.

Prepare sweet filling
In a small bowl, beat softened cream cheese with powdered sugar and vanilla until smooth. Spoon or pipe a tablespoon of the cream cheese mixture into each cooled basket. Top with fresh berries.

Glaze
Warm the apricot jam with 1 teaspoon water in the microwave or in a small saucepan until spreadable. Brush lightly over the berries to give a glossy finish. Chill briefly if desired and serve.
