Remove Wagyu beef from the refrigerator 15–20 minutes before cooking so it comes closer to room temperature for even searing.

Pat the thinly sliced beef dry with paper towels. Lightly season with kosher salt and freshly ground black pepper; set aside.

Pre-split the hoagie rolls but keep them attached at the back so they open like a book.
Cook Vegetables

Sweat onions and mushrooms
Heat a large heavy skillet or cast-iron griddle over medium-high heat. Add 1 tablespoon neutral oil and 1 tablespoon butter. When butter foams, add the sliced onions. Cook, stirring occasionally, for 4–6 minutes until they start to soften and turn translucent and edges caramelize lightly.

Cook Wagyu Beef

Sear thinly sliced Wagyu
Return the skillet to high heat. Add the remaining 1 tablespoon neutral oil. When shimmering, add the seasoned thin slices of Wagyu in a single layer, working in two batches if necessary. Do not overcrowd — a quick, hot sear preserves tenderness.

Cook without moving for about 20–45 seconds to develop color, then flip and cook another 15–30 seconds. Because the beef is thin and highly marbled, it should be just browned and still very tender. Avoid overcooking.

Mix the reserved cooked vegetables back into the beef in the skillet and toss to combine. Taste and adjust seasoning with a pinch more salt or pepper if needed.
Assemble & Melt Cheese

Divide the beef-and-vegetable mixture evenly among the four toasted hoagie bottoms. Place 1 slice of white American cheese over the meat on each sandwich (use 2 slices per sandwich if you prefer extra cheesiness).

Close each roll, pressing gently to compress the sandwich slightly. If desired, top with additional hot or sweet peppers, chopped parsley, or a pickle on the side.
