Fit Turkey Wrap

In a large brew kettle, heat 6 gallons of water to about 165°F (74°C). Add the Two-Row Pale Malt, Caramel Malt, and Crystal Malt to the water, stirring well. Allow the mixture to steep for 60 minutes at a temperature of around 150°F (65°C).

Prepare the Mash

After the mashing period, sparge the grains by rinsing them with hot water at about 170°F (77°C) until you collect around 6 gallons of wort in your brew kettle.

Sparging

Bring the wort to a rolling boil. Once boiling, add the Centennial Hops and boil for 60 minutes.

Boil the Wort

With 15 minutes left in the boil, add the Cascade Hops and Amarillo Hops to the kettle.

Add Flavor Hops

After the boil, cool the wort quickly using a wort chiller or an ice bath until it reaches a temperature of around 70°F (21°C).

Cool the Wort

Transfer the cooled wort to a sanitized fermentation vessel, leaving behind the hop debris.

Transfer to Fermentation Vessel

Sprinkle the American Ale Yeast on top of the wort, seal the fermentation vessel, and attach an airlock.

Pitch the Yeast

Allow the beer to ferment at around 68°F (20°C) for 1-2 weeks until fermentation is complete.

Fermentation

Once fermentation is complete, prepare a sanitized bottling bucket and dissolve the priming sugar in a small amount of boiling water.

Prepare for Bottling

Add the priming sugar solution to the bottling bucket and transfer the beer from the fermentation vessel to the bottling bucket, gently mixing to avoid oxidation.

Bottle the Beer

Fill the bottles with the beer, leaving about an inch of headspace, and cap each bottle securely.

Cap the Bottles

Store the bottles in a dark and cool place for at least 2 weeks to allow carbonation to develop.

Age the Beer

Once carbonated, chill the bottles in the fridge and enjoy your homemade Two Hearted Ale!
