Malt Preparation

1. Malt Steeping

In a large pot, heat 5 gallons of filtered water to about 160°F (71°C). Add the pale malt, crystal malt, and chocolate malt to the water. Stir gently to ensure all grains are submerged.

2. Steeping Time

Allow the mixture to steep for approximately 30 minutes, maintaining the temperature around 150°F to 155°F (65°C to 68°C).

Boiling

3. Boil the Wort

After steeping, remove the grains and bring the liquid (now called wort) to a boil. Once boiling, add the Cascade hops and boil for 60 minutes.

4. Add Chinook Hops

In the last 15 minutes of the boil, add the Chinook hops to the wort for flavor.

Cooling and Fermentation

5. Cool the Wort

After boiling, cool the wort quickly using a wort chiller or an ice bath until it reaches around 70°F (21°C).

6. Fermentation

Transfer the cooled wort to a sanitized fermentation vessel. Pitch the ale yeast into the wort and seal with an airlock. Allow the beer to ferment for 1 to 2 weeks at around 65°F to 70°F (18°C to 21°C).

Bottling

7. Prepare for Bottling

After fermentation is complete, prepare your bottles and caps. Sanitize them to prevent any contamination.

8. Bottle the Beer

Siphon the beer into the bottles, leaving about an inch of space at the top. Cap the bottles securely.

Conditioning

9. Condition the Beer

Store the bottled beer in a cool, dark place for at least 2 weeks to allow carbonation to develop.
