Prepare the Candied Bacon
Preheat the oven to 375°F (190°C). Line a baking sheet with parchment paper. Place the bacon slices on the baking sheet and sprinkle brown sugar evenly over each slice. Bake for 15-20 minutes until the bacon is crispy and caramelized. Remove from the oven and let cool.
Fry the Green Tomatoes
Slice the green tomatoes into 1/4 inch thick slices. In a shallow dish, mix the flour, cornmeal, salt, and pepper. Dip each tomato slice into buttermilk, then dredge in the flour mixture. Heat oil in a skillet over medium-high heat. Fry the tomato slices until golden brown, about 3-4 minutes on each side. Drain on paper towels.
Assemble the Sandwich
Slice the brioche buns in half. Spread a generous amount of pimento cheese on the bottom half of each bun. Add a few slices of candied bacon, a few fried green tomato slices, and a dollop of Daddy Mac's secret sauce. Top with pickles and the other half of the bun.
Serve
Serve the sandwiches warm and enjoy!
