Prepare the Filling

In a mixing bowl, combine the pulled pork, pimento cheese, and cooked collard greens. Mix until well combined.

Assemble the Egg Rolls

Lay an egg roll wrapper on a clean surface with a point facing you. Place 2-3 tablespoons of the filling in the center. Fold the bottom point over the filling, then fold in the sides and roll tightly. Seal the edge with a little water.

Fry the Egg Rolls

In a deep pan or fryer, heat vegetable oil over medium-high heat until hot (about 350°F/175°C). Fry the egg rolls in batches, turning occasionally, until they are golden brown and crispy, about 4-5 minutes. Remove and drain on paper towels.

Serve hot with hot honey mustard on the side.
