Cook the Pasta

In a large pot of boiling salted water, cook the elbow macaroni according to package instructions until al dente. Drain and set aside.

Make the Cheese Sauce

In the same pot, melt the butter over medium heat. Stir in the flour and cook for about 1 minute until lightly golden. Gradually whisk in the milk, ensuring no lumps remain. Cook until the sauce thickens, about 5 minutes.

Add Cheeses

Lower the heat and stir in white queso cheese and pimento cheese until melted and smooth. Season with salt and pepper to taste.

Combine Pasta and Sauce

Add the cooked macaroni to the cheese sauce and mix well to combine.
