Cloves & Cinnamon Simple Syrup
Make syrup
Combine 1 cup sugar and 1 cup water in a small saucepan. Add 8 whole cloves and 2 cinnamon sticks. Bring to a gentle simmer over medium heat, stirring until sugar dissolves. Reduce heat to low and simmer for 5 minutes to infuse spices.
Remove from heat and let the syrup steep with the spices for 20–30 minutes for stronger flavor (10–15 minutes for a lighter note).
Strain out cloves and cinnamon sticks through a fine-mesh sieve into a clean container. Allow syrup to cool to room temperature. Refrigerate in a sealed jar; syrup will keep 2–3 weeks.
Cocktail
Prepare cocktail (with egg white, dry shake)
If using egg white: add 2 oz bourbon, 0.75 oz fresh lemon juice, 0.75 oz cooled cloves & cinnamon simple syrup, and 0.5 of an egg white to a cocktail shaker. Dry shake (no ice) vigorously for 15–20 seconds to build foam.
Shake with ice
Add ice to the shaker (enough to fill). Shake vigorously for another 10–15 seconds until the shaker is cold and well chilled.
Strain and serve
Double-strain into a chilled coupe or rocks glass (if serving on the rocks, fill glass with fresh ice).
Serve immediately.
