Hull and quarter the strawberries; leave blueberries whole. Place berries in a bowl, add lemon juice and 1 tablespoon granulated sugar, gently toss to combine. Let macerate at room temperature for at least 15 minutes (up to 1 hour) to draw out juices.

Chill a medium mixing bowl and beaters in the fridge for 10 minutes if possible. Pour chilled heavy cream into the bowl, add powdered sugar and vanilla. Whip with a hand mixer or stand mixer on medium-high speed until soft peaks form (about 2–3 minutes). Do not overbeat; stop when cream holds shape but is still airy. Refrigerate until ready to serve.

Preheat waffle iron according to manufacturer instructions. Lightly brush or spray with butter or oil.

In a large bowl, whisk together the flour, 2 tablespoons granulated sugar, baking powder, and salt until combined.

In a separate bowl or large measuring cup, whisk the eggs until blended. Add the milk, melted butter (cooled slightly), and 1 teaspoon vanilla; whisk to combine.

Make a well in the dry ingredients and pour the wet ingredients in. Stir gently until just combined; a few small lumps are fine. Do not overmix to keep waffles light.

Let batter rest for 5 minutes while the waffle iron finishes heating. If batter thickens too much, stir in 1–2 tablespoons milk to reach pouring consistency.

Spoon or pour the recommended amount of batter into the preheated waffle iron (follow your iron's guidance). Close and cook until waffles are golden brown and crisp, about 3–5 minutes depending on iron. Repeat, brushing the iron with a little butter between batches as needed. Keep finished waffles warm in a 200°F (95°C) oven on a rack for up to 15–20 minutes while you finish remaining waffles.

Assembly & serving

Place one or two waffles on each plate. Spoon a generous portion of macerated berries and their juices over the waffles.

Top with 2–3 tablespoons of house whipped cream per serving (adjust to taste). Drizzle with maple syrup if desired and dust lightly with powdered sugar.

Serve immediately while waffles are warm and crisp.
