Preheat and prepare

Preheat your waffle iron according to manufacturer instructions to medium-high heat. Lightly brush or spray both plates with neutral oil or nonstick spray; keep remaining oil/spray nearby.

Mix dry ingredients

In a large mixing bowl, whisk together the all-purpose flour, granulated sugar, baking powder, and salt until evenly combined and aerated.

Combine wet ingredients

In a separate bowl or large measuring cup, beat the eggs lightly. Add the milk, melted cooled butter, and vanilla extract and whisk until homogeneous.

Make the batter

Pour the wet ingredients into the dry ingredients. Gently fold with a spatula or whisk just until combined and no large dry streaks remain. Do not overmix; small lumps are fine. Let the batter rest 5 minutes to allow the baking powder to begin activating and the flour to hydrate.

Fold in sprinkles

If making confetti waffles, fold the mini rainbow sprinkles into the rested batter gently and briefly (about 10–15 strokes). Avoid overmixing to prevent color bleed and batter thinning. Use 1/2 cup sprinkles for the full batch; you may use less for fewer speckles.

Portion and cook

When the waffle iron is hot, lightly re-oil or spray the plates. Pour or ladle batter onto the center of the iron — quantity depends on your iron size (roughly 1/2 to 3/4 cup for a standard round or Belgian waffle iron). Close the lid and cook until the waffle is golden brown and crisp, usually 3–5 minutes. If your iron has an indicator light, follow it; otherwise, check after 3 minutes.

Repeat

Transfer cooked waffles to a wire rack set over a baking sheet to keep them crisp while you cook remaining batter. Do not stack directly on a plate, which traps steam and softens waffles. Re-oil the iron between waffles as needed.

Serve waffles warm with maple syrup and any desired toppings. Dust with powdered sugar if using. Adjust toppings and portion size to taste.

Make-ahead and reheating

To store, cool waffles completely, then freeze in a single layer on a baking sheet before transferring to a zip-top bag. Reheat frozen waffles in a toaster or 375°F (190°C) oven for 6–8 minutes to restore crispness.
