1. Choose the beer

Use a clean glass. If available and appropriate for the beer style, chill the glass briefly (not frosty). Hold the glass at a slight angle (about 45 degrees) under the tap.

2. Prepare the glass

Pull the tap handle fully to start a steady flow. Aim the beer to hit the middle of the slope of the glass to minimize excessive foam. Maintain the 45-degree angle as the glass fills.

3. Start the pour

When the glass is about two-thirds full, slowly tilt the glass upright and continue pouring to create a modest head appropriate to the style (about 1/2 to 1 inch for most lagers and ales; more for nitro stouts). Use a slower pour to control foam.

4. Adjust for head

Stop the flow cleanly by returning the tap handle to its closed position. Wipe any drips from the glass rim. Serve immediately with the beer name and style to the guest, noting ABV or any flavor highlights if known.

5. Finish and serve

For a half-pint, use a smaller glass and follow the same technique, adjusting pour volume so the final product has the proper head and total volume.
