Prep and dry

Pat the 10 chicken wings thoroughly dry with paper towels. Removing surface moisture is critical for crisp skin. If wings are whole, cut at the joints into drumettes and flats and discard tips (or reserve for stock).

Season and coat

Place the dried wings in a large bowl. Sprinkle 1 1/2 tsp kosher salt and 1/2 tsp freshly ground black pepper evenly over the wings. Add 1 tablespoon baking powder and 1 tablespoon neutral oil. Toss well with hands or tongs until every wing is evenly coated in the powder/oil/seasoning mixture.

Arrange the seasoned wings in a single layer on a wire rack set over a baking sheet and refrigerate, uncovered, for 1–6 hours. This further dries the skin for extra crispness. If short on time, proceed immediately to cooking.

Bake (crispy method)

Preheat oven to 250°C (480°F) if your oven reaches it; otherwise preheat to 230°C (450°F). Place the wire rack with wings on the baking sheet into the oven and bake at the high temperature for 25–30 minutes, turning once halfway through, until skin is golden and the juices run clear. Alternatively: start at 150°C (300°F) for 25 minutes, then increase to 230°C (450°F) for 20–25 minutes to finish and crisp.

Finish and rest

Remove wings from oven and transfer to a clean plate for 3–5 minutes to let juices settle. Taste and adjust salt/pepper if needed. Serve plain as requested.
