Harvest the Syrah grapes when they are ripe, usually in late September to early October.

Harvesting Grapes

Crush and destem the grapes to release the juice and pulp.

Crushing and Destemming

Transfer the crushed grapes to fermentation tanks and add yeast. Allow fermentation to occur for about 2 weeks, keeping the temperature controlled.

Fermentation

Once fermentation is complete, press the mixture to separate the liquid wine from the solid grape skins and seeds.

Pressing

Transfer the wine to oak barrels for aging. This process can take anywhere from 6 months to 2 years depending on the desired flavor profile.

Aging

After aging, filter and bottle the wine. Add sulfites to preserve the wine.

Bottling

Label the bottles and prepare for distribution.
