Prepare sweetening
If using granulated sugar, dissolve 2 tablespoons in 1 tablespoon hot water to make a quick syrup. Alternatively use 2 tablespoons of pre-made simple syrup. Stir until fully dissolved and slightly cooled.
Combine flavor components
In a tall glass or clean can-style serving container, pour the dissolved sugar or simple syrup, add 1 teaspoon fresh lemon juice and 1 teaspoon chosen natural flavor extract. Stir gently to combine.
Add carbonated water
Carefully pour 12 oz of cold carbonated water into the glass over the flavor mixture. Pour slowly down the side to preserve carbonation. Stir once gently with a spoon or straw for 5β8 seconds to evenly distribute flavors without flattening the soda.
Adjust sweetness and flavor
Taste and adjust: add up to 1 additional teaspoon sugar/simple syrup if you prefer sweeter, or up to 1/2 teaspoon more lemon juice for brightness, or an extra 1/4β1/2 teaspoon extract for stronger flavor. Stir gently after each addition.
Serve
Add 3β4 ice cubes if desired. Optionally garnish with a lemon or lime wedge and a sprig of mint. Serve immediately to retain carbonation.

Slip the lemon or lime wedge onto the rim and lightly slap the mint between your palms to release aroma, then tuck it next to the ice or float on top.
