Peel and slice
Trim root and top ends from the onions. Peel skin fully. Slice each onion into 1/2-inch thick rounds; separate into individual rings and set aside. Reserve any broken smaller rings for crispier pieces.
Place the onion rings in a large bowl, sprinkle with the kosher salt and black pepper, and toss gently to distribute. Let sit 10 minutes to draw out a little moisture (this improves adhesion and crisping).

In a shallow wide dish, whisk together the all-purpose flour, cornstarch, smoked paprika, and grated Parmesan (if using). This dry mix will give structure and a light crisp.
Place the panko breadcrumbs in a separate shallow dish. Press the panko lightly with a fork to break any large clusters; keep nearby for final dredging.
Wet Batter
In another bowl combine the buttermilk and the egg; whisk until smooth. The buttermilk provides tang and helps tenderize the onion surface for better browning.
Working in batches, dredge onion rings first in the flour mixture, shaking off excess, then dip into the buttermilk-egg mixture, and finally press into the panko so each ring is well coated. For an extra-crunch layer, repeat the buttermilk dip and a second panko press on thicker rings.

Brush the grill grates or grill pan with 1 tablespoon of the neutral oil to prevent sticking. Arrange coated onion rings in a single layer on the grill or in the pan. Do not overcrowd; work in batches if necessary.
Grill the rings 2–3 minutes per side, pressing gently with a spatula once after placing to ensure contact. You're looking for golden-brown, toasted panko with clear grill marks — total cook time per batch should be 4–6 minutes depending on thickness and heat. If using a grill with hot spots, move rings as needed to avoid burning.
For extra flavor and a slightly richer finish, brush the grilled rings with the melted butter mixed with the remaining 1 tablespoon oil immediately after removing them from the heat.
