Slice proteins and vegetables

Slice the Spam into 1/4-inch slices (about 6 oz total). Halve the smoked sausage lengthwise and slice into bite-sized pieces. Thinly slice the cabbage, onion (if using), and diagonally slice the green onions. If using fresh chili, slice thinly.

Measure out the baked beans, seasoning ingredients, and have the instant ramen ready. Separate the American cheese half-slice so it's ready to place on the finished soup.

Build & Cook Broth

Heat a medium pot over medium heat and add 1 tsp neutral cooking oil. When warm, add the sliced Spam and sausage. Pan-fry 2–3 minutes per side until edges are lightly browned to render a little fat and develop flavor.

Push the browned meats to one side and add the minced garlic and sliced onion. Sauté 30–45 seconds until fragrant and the onion begins to soften.

Pour in 6 cups water and add 1 tablespoon dashi powder (or prepared broth), soy sauce, sugar, gochujang, and gochugaru. Stir to dissolve the pastes and bring to a gentle boil.

Once boiling, reduce heat to maintain a simmer and add 1 cup baked beans (including some of the bean sauce). Stir to incorporate. Simmer 5 minutes to let flavors meld.

Add Vegetables & Noodles

Add the thinly sliced cabbage and the instant ramen block to the simmering broth. If your ramen block contains its own seasoning packet, you can use half of it (or none) depending on salt preference; the described recipe assumes you primarily use the custom broth and only add the packet sparingly if desired.

Cook the noodles and cabbage together for 3–4 minutes until noodles are tender and cabbage softened but still slightly crisp. Taste broth and adjust: add more soy sauce for saltiness, gochugaru for heat, or a pinch of sugar for balance.

Finish & Serve

Ladle the ramen, broth, meats, beans, and vegetables into a serving bowl. Place half a slice of American cheese on top of the hot noodles so it slightly melts. Drizzle 1/2 tsp sesame oil over (optional).

Garnish with sliced green onions and fresh chili if using. Serve immediately, providing extra gochugaru or soy sauce at the table.
